Fresh Apple Cinnamon Muffins

Our terrific customers asked for a Fresh Apple Cinnamon Muffin so here it is!

 

Preheat oven to 375 degrees.  Lightly coat non-stick muffin tins with cooking spray.

 

Using a food processor or the large holes on a box grater, shred enough apples to measure 2 cups.  (This is about 4 medium apples.)  You can shred with the peel or without, your choice. 

 

In a large bowl, whisk together 1-1/4 cups milk, 1-1/4 cups plain yogurt, 1-1/4 cups Splenda or 1 cup sugar, and 2 teaspoons vanilla.  Add Cinnamon Baking Mix, stirring just to moisten.  Blend in shredded apples and any accumulated juices.

 

Spoon batter into prepared tins, using about 1/4 cup for each muffin.

 

Bake 18-23 minutes or until wooden pick comes out almost dry.  Remove from oven and allow to cool in tin for 5 minutes.  Yield:  16 muffins

 

For muffin tops (little pieces of heaven that taste like individual apple cakes!), bake at 350 degrees for 10-14 minutes.
