Apple Cinnamon Muffins Created With: Baking Mix - Cinnamon "Oh my goodness, you won't believe how incredible these muffins are! "In a bowl, place 1 cup (about 1/2 can) of Lucky Leaf No Sugar Added Apple Pie Filling. (I got mine at Super Walmart in the baking aisle.) Cut or mash the apples into small bite-size pieces. Add 1/2 cup unsweetened applesauce, 1 cup plain fat-free yogurt, 1-1/2 cups fat-free milk, 1-1/2 cups Splenda, and combine well. To this, add one package Southaven Farm Cinnamon Baking Mix. Mix just until combined. Place 1/4 cup batter into lightly greased muffin tins. Bake at 375 degrees for 23-26 minutes. This makes 18 muffins at 94 calories each, 1/2 gram of fat, and 4 grams of fiber. ...Just incredibly, unbelievably GOOD!!!" Note from the Kitchen of Southaven Farm: We made these in muffin top pans, baking at 350 degrees for 17-19 minutes. They were like individual apple "cakes" and were very good.
