Sweetheart Cupcakes

"My daughters and I wanted to make something special for Valentine's Day but we came up with something so wonderful that now all my kids want this but have said not just for Valentine's!  This was a fun family project and here's what we did:

"We made 1 package of Sans Sucre Low Fat French Vanilla Mousse.  We added a few drops of red food coloring to make it really pink.  We refrigerated it for about an hour.  While the mousse was firming, we took 1 package of Southaven Farm Chocolate Baking Mix and made it as directed for chocolate muffins -- except we baked the batter in non-stick heart-shaped muffin tins.  These are soooo cute!  We let the cupcakes cool completely and then frosted them with the pink mousse.  When we were done, we took red hots and made little heart outlines on top of the frosting.  Make sure to refrigerate the cupcakes after frosting them.  Not only did they look incredible, the taste was wonderful!  We got the idea to do this from the Chocolate Mousse Snack Cake on this site.  Thank you, Southaven Farm.  Your mixes are great and the recipes are fun!!"



Note from the Kitchen of Southaven Farm:  We didn't have heart-shaped muffin pans so we improvised.  They still look pretty cute -- and taste fabulous.
