Coconut Topped Chocolate Muffins

"I received your mixes and was so excited to give them a try.  They are great!  I used the recipe for the chocolate muffins but instead of vanilla, I used coconut extract and sprinkled a bit (1 teaspoon) of coconut on top of each muffin.  They were wonderful!!!  ...Thanks again for such a GREAT product!"
