Cottage Cream Pancakes (Whole Wheat Baking Mix) Created With: ***NEW RECIPES*** "My
grandmother used to make pancakes with cottage cheese and sour cream
that we all loved but they had tons of sugar and white flour. I think I
have come close to re-creating her recipe using your Whole Wheat Baking Mix. These
pancakes are really yummy and have protein from the dairy and lots of
good whole grains. We traditionally eat them topped with jam but yogurt
or maple syrup would be good too. ![]() "Ingredients: 1/2 teaspoon baking powder 1/3 of the box of Southaven Farm Whole Wheat Baking Mix (1 cup plus 2 heaping tablespoons of mix or 140 grams) 1 cup nonfat milk 3 tablespoons nonfat cottage cheese 3 tablespoons nonfat sour cream 1/2 teaspoon vanilla extract 3 tablespoons Splenda or sugar "In a bowl, whisk together the baking powder and baking mix. Set aside. "In another bowl, whisk together milk, cottage cheese, sour cream, vanilla, and sweetener. Add wet ingredients to dry and combine. Lumps are okay. "Cook pancakes on a greased skillet until bubbly and golden. Flip and continue cooking until done. You'll get 12 BIG pancakes from this recipe and it's easy to double or triple for bigger or hungrier families!"
