DAIRY-FREE Vegan Dark Chocolate Bundt Cake (Chocolate Baking Mix)

"I use all your mixes and make a lot of your recipes and appreciate the fact that I can substitute non-dairy add-ins to make them vegetarian or vegan.  I created this recipe using the Southaven Farm Chocolate Baking Mix and it is without a doubt the best chocolate cake I've ever had.  Even my non-vegan friends ask me to make this cake for them over and over again.  Here's the recipe:

"Ingredients:
One box Southaven Farm Chocolate Baking Mix
1 teaspoon baking powder
1-3/4 cups strong brewed coffee, cooled
1-1/2 cups sugar
1/2 cup unsweetened applesauce
2 teaspoons vanilla extract
1 teaspoon almond extract

"In a large bowl, combine baking mix with baking powder.  Set aside.

"In a large measuring cup or bowl, pour cooled coffee over sugar.  Add applesauce and extracts and whisk to combine all.  Add wet ingredients to dry ingredients, stirring just until batter is smooth.  Do not overmix!

"Pour batter into a greased 10" bundt pan.  Bake at 325 degrees for 45 minutes or until cake tests done.  Remove from oven and set on a rack for 30 minutes to cool.  Invert onto a serving plate, slice, and enjoy!!  This cake is so rich and moist and chocolaty and delicious, you don't even need icing!!"
