Banana Fudge Muffins

"I love the Southaven Farm mixes, especially the Chocolate Baking Mix and the Ginger Spice Baking Mix.  I do find, however, that your recipes have too much sugar in them, whether using real or splenda.  If I were making the mix into a dessert cake, I would probably use more sugar but if I'm making muffins, I can cut back on the sugar a lot and have a muffin sweet enough for breakfast.

"I just made these muffins and they are great!  The bananas add more sweetness without adding more sugar.  You could omit the honey as well if you want and they will still be sweet enough.  I've made this same recipe with the Ginger Spice Baking Mix and those are great too!



"Ingredients:
3 medium overripe bananas, mashed
1/2 cup sugar
2 tablespoons honey
1 teaspoon vanilla extract
1 cup skim milk
1 package Southaven Farm Chocolate Baking Mix

"In a medium bowl, combine mashed bananas, sugar, honey, vanilla, and milk.  Stir in Chocolate Baking Mix just until everything is moistened.

"Divide batter among 12 greased muffin cups.  Bake at 400 degrees for 14-18 minutes or until set.  Pressing on top of a muffin, it should spring back and not sink in.

"Cool in pan for 5 minutes and then remove to cooling rack.  Makes 12 muffins."

Note from the Kitchen of Southaven Farm:  When we tested JP's muffins, we found the batter to be a little stiff.  If this happens to you, simply add a few tablespoons of water until the batter is light.  We really enjoyed these muffins!
