Cream Cheese Frosted Pumpkin Bars Created With: Baking Mix - Ginger Spice "I recently received my first order of baking mixes. I just tried my first recipe, Cream Cheese Frosted Pumpkin Bars. They came out great and they have only 1 WW point each! I wanted to share it. I didn't expect something fat free to come out with such a tender texture. Now I'm looking forward to trying all the other mixes! Thanks! ![]() (Photo Courtesy of MS, Corona, CA) "Ingredients: 1 package Southaven Farm Ginger Spice Baking Mix 1/2 cup Splenda Granulated 1-1/3 cups Libby Pumpkin Pie Mix (not just canned pumpkin) 1 egg white 6 ounces fat free, sugar free vanilla yogurt "Cream Cheese Frosting: 3 ounces Neufchatel cheese (reduced fat cream cheese) 1/2 cup confectioner's sugar 1/2 cup Splenda Granulated 1 teaspoon orange juice "Preheat oven to 375 degrees. Spray a light metal or glass 13x9" baking dish with nonstick spray; set aside. "In a large bowl, mix baking mix and splenda. "Measure 1-1/3 cup pumpkin pie mix into a large measuring cup; add egg white and yogurt. Stir until combined. "Add the wet ingredients to the dry ingredients and stir until just combined. Mixture will be very thick. Spread mixture in baking dish and bake at 375 degrees for 15-20 minutes or until done. Remove from oven and cool completely. "Mix all ingredients for frosting at low speed until combined, then switch to medium speed and beat until very smooth. Spread on cooled bars. Cut into 30 bars."
