Corn, Apple & Carrot Muffins

"I make your Corny Cornbread Muffins at least once a week for dinner.  I love the Cornbread Baking Mix so much that I wanted to use it for a breakfast or snack muffin so I came up with this recipe.

"Whisk together 1 cup nonfat milk, 3/4 cup plain nonfat yogurt, and 1/4 cup sugar.  Add 1 medium apple that has been grated and 1 cup grated carrots (about 2 carrots).  Mix in a box of Cornbread Baking Mix and stir to combine everything.

"Place batter in sprayed muffin tins and bake at 425 degrees for 20 minutes, then cool in pans for 5-10 minutes.  My husband and I like having these for breakfast or for an afternoon snack."
