Banana Nut Spice Muffins Created With: Baking Mix - Ginger Spice "I have been
making Banana Nut Spice Muffins using Southaven Farm's Ginger Spice
Baking Mix for about two years. My mother made a great banana nut
spice bread when I was a little boy and it reminds me of her. "Preheat oven to 400 degrees. Lightly coat non-stick muffin pan with cooking spray. In a large bowl, whisk together 1-1/4 cups nonfat milk, 3 eggs, 1 tablespoon vanilla extract, and 1-3/4 cups Splenda Granular (or 1 cup nonfat milk, 3 eggs, 1 tablespoon vanilla extract, and 1-1/2 cups sugar). Add Southaven Farm Ginger Spice Baking Mix, stirring just to moisten. Toss in 2 bananas that have been chopped and 1/2 cup crushed walnuts and combine. Spoon batter into prepared pan, using about 1/4 cup for each muffin. Bake 13-17 minutes or until wooden pick comes out almost dry.
