Apricot Cinnamon Muffins Created With: Baking Mix - Cinnamon "I'm almost 82 but very young at heart. Love cooking and thinking about things to do with your great mixes! Yesterday's menu: I used the Cinnamon Baking Mix prepared according to the box directions and added 3/4 cup (about 5 ounces) of chopped dried apricots to the dry mix. This coats the apricots so they don't sink to the bottom of the muffins. Dried apricots are high in sugar content but are very healthy. Three-quarters cup distributed among 16 muffins isn't really too 'sinful'!" ![]() Note from the Kitchen of Southaven Farm: We love these muffins! We set aside some of the chopped apricots and sprinkled them on top of the batter before baking. Delicious -- and they look pretty too!
