"I made the 'DAIRY-FREE Morning Glory Bran Muffins' recipe with the Cinnamon Baking Mix -- even better than the original!  The batter was thicker than usual but they were fantastic.  ...Thanks for all of your great mixes!"

Note from the Kitchen of Southaven Farm:  We love KM's idea and the Cinnamon Morning Glory Muffins indeed are wonderful.  They are very dense so don't expect a big rise.  Also, we increased the liquid just slightly from the original "DAIRY-FREE Morning Glory Bran Muffins."  For your convenience, the complete recipe is below.





"DAIRY-FREE Cinnamon Morning Glory Muffins"

In a very large bowl, mix together 1/2 cup unsweetened applesauce, 1-1/4 cups water, 1 cup Splenda or sugar, and 2 teaspoons vanilla.  Add in 2 medium apples which have been shredded, 2 cups of shredded carrots, 1/4 cup raisins, 1/4 cup shredded coconut, and 1 cup canned crushed pineapple in its juice, undrained.  Mix everything together thoroughly and then add one box of Southaven Farm Cinnamon Baking Mix.  Get everything evenly distributed and then place the mixture into 2 PAM-sprayed muffin tins -- you will get 20 muffins.  Bake at 375 degrees for 40-45 minutes."
