Cornbread Madeleines Created With: Baking Mix - Cornbread (Wheat Free) Madeleines typically are made from batter poured into special oval-shaped molds with ribbed indentations, giving them a shell shape. The traditional batter is made with butter, sugar, eggs, flour, and lemon or orange flavor. When we got some madeleine pans, we had to try them but we decided to make Cornbread Madeleines. Not only are they adorable, they taste delicious too. Prepare one box of Southaven Farm Cornbread Baking Mix according to "Muffin Instructions." For standard size madeleines, spoon a scant 2 tablespoons batter into each lightly greased mold. (The entire box of mix will make 24 Cornbread Madeleines but you certainly can make less by measuring out half the dry mix and halving the liquid ingredients as well.) Shake the pans to evenly distribute the batter and then bake at 400 degrees for 12-14 minutes or until the madeleines are golden brown. Remove from oven, allow madeleines to cool in the pan for 5 minutes, and then eat and enjoy. Madeleine pans are available at most kitchen stores and gourmet shops. They're so much fun to use!
