Corny Cornbread/Muffins Created With: Baking Mix - Cornbread (Wheat Free) "I love your Cornbread Baking Mix. There are so many different things to do with it in addition to making the very wonderful cornbread. "Tonight I just added one 11-ounce can of very well drained corn niblets to the batter. (The second time I made these, I drained the liquid from the corn into a measuring cup and then added enough milk to get to the recipe measurement.) I'm sure you could use more or less corn, to taste, it's just that I had that can in my pantry. I baked the muffins at 400 degrees for about 25 minutes. They are superb. I know you could do this with the pan cornbread too. Thanks for all your wonderful mixes."
