Yours are the best and the only ones that have all the healthy stuff I desire and still taste good. I add an egg and one tablespoon baking powder, use Splenda (as directed on the package), and make 5 BIG muffins. ...Be sure that the oven is heated well or they are a little less done in the middle. Note from the Kitchen of Southaven Farm: We tested SB's recipe and with our giant muffin tins, which measured a very generous 3/4 cup of batter each, we got 6 muffins. We baked a few different batches at 400 degrees for 25-30 minutes and they turned out great.
