Heavenly Chocolate Pomegranate Muffins Created With: Baking Mix - Chocolate "I know how healthy pomegranates are supposed to be so I thought it would be fun to make a muffin using pomegranate juice. These really are good and healthy with lots of antioxidants. "In a bowl, combine 1 cup plain nonfat yogurt, 3/4 cup pure pomegranate juice, 3/4 cup water, and 1-1/2 cups splenda. Add Southaven Farm Chocolate Baking Mix and gently combine. Spoon batter into lightly greased muffin tins. Bake at 425 degrees for about 12 minutes, then cool in tin for about 5 minutes. "I also made these for my Mom but she doesn't like splenda so I used 3/4 cup plain nonfat yogurt, 3/4 cup pomegranate juice, 1/2 cup water, and 1-1/4 cups sugar. I baked them at 425 degrees for about 14 minutes. "The thing I really like about your mixes is how much fun you can have with them. I made about six batches of these muffins after we talked and I used more juice, less juice, more sweetener, etc., until I found the combination I liked.
