Cayenne Corn Muffins

"I'm glad to share. 

"I followed the directions for the Southaven Farm corn muffins just as they were on the package.  After mixing the (fat-free) yogurt, (fat-free) milk and splenda, I added about 6 oz. of no salt added whole kernel corn.  (I rinsed and drained the corn before I added it.)  Then to that mixture I added about 1/2 teaspoon cayenne pepper.  (More or less pepper could be added to suit your taste.)  I then added the dry mix and whisked it all together, then I put it in muffin tins and baked according to the package directions.  With the addition of the corn, I baked it for 18 minutes, which is about one minute longer than I would have baked the muffins with no corn.  I checked with a toothpick and it came out of the muffins almost clean.  They were yummy!"



Note from the Kitchen of Southaven Farm:  For those of you not used to a big kick, we suggest that you start with less cayenne pepper, maybe 1/8 teaspoon, taste the batter, and then adjust the "heat" to your liking.
