Using DAIRY SUBSTITUTES Created With: Dairy Substitutes Many of you have asked about substitutes for dairy. Below we have some suggestions and as we learn of other ideas, we'll be happy to update the list. Send an email to mail@SouthavenFarm.com and let us know if you have recommendations as well. Milk Substitutes: almond milk coconut milk hazelnut milk rice milk soy milk Yogurt Substitutes: Applesauce Applesauce may be substituted for yogurt although substituting the entire amount may change the texture of the baked good. Additionally, you may want to decrease the amount of sweetener in the recipe. Soy Yogurts You can make your own "soy yogurt" by pureeing medium firm silken tofu and using it cup-for-cup for dairy yogurt. Store-bought soy yogurts include Cremso, Nancy's Organic Cultured Soy Yogurt, Trader Joe's Soy Yogurt, Silk Cultured Soy Yogurt, WholeSoy Creamy Cultured Soy Yogurt, and Wildwood Probiotic SOYogurt. Sour Cream Alternatives Vegan Sour Cream Alternative by Galaxy Nutritional Foods, Moonomor Soy Sour Cream, and Better Than Sour Cream Sour Supreme. Eggs While technically not a dairy substitute, eggs may be substituted for yogurt. Start by substituting one large egg for every one-half cup yogurt and assess the batter texture to determine if more eggs are needed to make the batter light. - From the Kitchen of Southaven Farm |
