Chocolate Mint Drops

"I've got another great recipe for ya!

"Ingredients:

1-1/2 cups skim milk
1 cup fat free French vanilla yogurt
1 tablespoon peppermint extract
1-3/4 cups Splenda
1 package Southaven Farm Chocolate Baking Mix
3 Hershey 60 calorie mint chocolate sticks

"Preheat oven to 425 degrees. 

"Mix wet ingredients and Splenda in a large bowl.  Add baking mix. 

"Spray a muffin pan with cooking spray.  Fill each muffin tin with mixture.  Break each Hershey stick into 8 pieces for minis, 4 pieces for full-size muffins.  Insert a 1/8 or 1/4 piece of Hershey stick into the middle of each muffin. 

"Bake for 9 minutes for minis or 12 minutes for full size
.  Yields 24 mini muffins or 12 full-size muffins."
 
Note from the Kitchen of Southaven Farm:  RJ in Depew, NY tells us that instead of using peppermint extract, she uses about 2 teaspoons mint extract -- which has a spearmint base rather than a peppermint one -- and her cupcakes taste like Thin Mint Girl Scout cookies!

Also, a number of our customers have said they are having difficulty finding the Hershey's 60 Calorie Dark Chocolate Sticks.  Our best suggestion is to substitute a small piece from a chocolate candy bar or use a scant teaspoon of mini-chocolate chips instead of 1/4 of a Stick.  This will give the same effect with approximately the same nutritional information.
