Ricotta-Frosted Chocolate Cupcakes Created With: Baking Mix - Chocolate "This is a superb, healthy dessert. I 'lifted' the ricotta dessert idea from the "Bake up one batch of any of the "While the muffins/cupcakes are baking, in a food processor put one 15 ounce container of ricotta cheese, 2 teaspoons unsweetened cocoa powder, 1 teaspoon vanilla, and about 1/4 cup splenda or 3 tablespoons sugar. Blend it all together with the steel blade until the mixture is really smooth. Refrigerate the ricotta mixture until it's cold. When the muffins/cupcakes are cool, generously frost the tops with the ricotta mixture. It's INCREDIBLE!! Make sure you keep the frosted cupcakes refrigerated. However, with my husband and teenage kids eating these, they didn't last very long!"
