Delicious Bread Pudding (Cinnamon)

"For use with the Cinnamon Baking Mix or Gingerbread Baking Mix -- both are delicious!



 



"Start by making cinnamon bread following the package instructions using milk, yogurt, but only 1/4 cup splenda.  Save 4 slices and let them sit for a day.

"INGREDIENTS:
4 slices day-old bread
1 tablespoon and 1 teaspoon margarine or Smart Balance, melted
3 eggs beaten (or 1 egg plus 1/2 cup egg substitute, beaten)
1-1/3 cups nonfat or 1% milk
1/3 cup granulated splenda
dash of ground nutmeg
1 teaspoon vanilla extract

Optional add-ins: 
1/3 cup semi-sweet chocolate chips OR
1/4 cup chopped pecans or walnuts plus 1 diced apple OR
1 diced apple, sauteed for a few minutes in margarine

"DIRECTIONS:
Preheat oven to 350 degrees and spray 8x8" square baking pan with Pam.  Break bread into small pieces into pan.  Drizzle melted margarine over bread.  (If desired, sprinkle with semi-sweet chocolate chips or apples and nuts.) 

"In medium bowl, beat eggs, milk, splenda, nutmeg, and vanilla until well mixed.  Pour over bread mixture and lightly push down with a fork until bread is covered and soaking up the egg mixture.

"Bake for 45 minutes or until the top springs back when lightly tapped.  Serves 8."

Note from the Kitchen of Southaven Farm:  We are true chocoholics so we added the optional chocolate chips.  Also, we didn't bake a special bread for this.  We had a loaf of cinnamon bread that we had prepared according to the package directions and we used four slices of that.  True to its name, it was "Delicious Bread Pudding."
