Choco-Cherry Muffins or Cake Created With: Baking Mix - Chocolate "I read on a Weight Watcher message board about people adding frozen cherries or a can of cherries to your mixes so I gave it a try myself. I'm going to try a few other things the next time too: I'm going to bake this as a snack cake in a 9"x13" pan or as a bundt cake. Also, I bet a can of cherries would work in many of your other mixes as well. "This is all I did to make these scrumptious muffins: Pour a 14-1/2 ounce can of tart cherries packed in water into a strainer set over a measuring cup. Add enough nonfat milk to the juice/water to make 1-1/2 cups. Proceed with the package instructions by adding 1 cup plain nonfat yogurt, 2 teaspoons vanilla, and 1-3/4 cups Splenda. Whisk together and add one package of Southaven Farm Chocolate Baking Mix. Fold in the drained cherries. Spoon the batter into a muffin tin sprayed with Pam, using about 1/2 cup per muffin. (This made 12 gigantic muffins but I think you could make 16 'regular' size ones as well.) Bake at 425 degrees for 18 minutes. Cool in the pan for 5 minutes. "These really are indescribably delicious, ...unbelievably filling and very satisfying!"
