Cream-Filled Chocolate Cupcakes

"I've come up with a new recipe for the Chocolate Baking Mix.  I'm currently working on more recipes using your wonderful mixes but I wanted to go ahead and share this one with you now.  I promise you haven't heard the last of me!

"These are a clone of that other leading chocolate cream-filled cupcake with the squiggly white line on top.  Although these lack that distinctive marking, they're just as good.  One bite and you'll be hooked!






CREAM-FILLED CHOCOLATE CUPCAKES


"
Prepare chocolate muffins or Chocolate WOW Cupcakes as directed.  Depending on how many muffins you make, mix approximately 1 cup of Cool Whip Lite with a couple tablespoons of dry Jello Brand Sugar-Free, Fat-Free Vanilla Instant Pudding Mix.  Stir until blended, adding more powder as desired.


"After muffins have cooled completely, cut a tablespoon-sized hole in the top of each.  (Make sure you cool the muffins before adding the filling.  Otherwise the filling will melt.)  Scoop some of the Cool Whip mixture into the holes of each muffin.  (When you make the hole, you may have to cut a bit off the bottom of the cutout piece so it doesn't cause the filling to squish out when you put it back on.)  When done, replace the cutout tops.

FROSTING


"Ingredients:


2-3/4 cups Whey Low Powder (powdered sugar substitute)

6 tablespoons unsweetened cocoa powder

6 tablespoons butter or butter substitute

5 tablespoons low-fat or skimmed milk

1 teaspoon vanilla extract


"In a medium bowl, sift together the Whey Low Powder and cocoa and set aside.


"In a large bowl, cream butter or butter substitute until smooth, then gradually beat in sugar mixture alternately with milk.  Blend in vanilla.  Beat until light and fluffy.  If necessary, adjust consistency with more milk or sugar.  Spread over cooled cupcakes."
