Chocolate Granola Muffin Tops--4 Servings
Created With: Baking Mix - Chocolate
"This is what I call 'red light' food. I'm glad I just baked four of these today -- two for my husband and two for me. He'd better eat his two soon!
"Ingredients: 1/4 cup fat free milk (I used fat free evaporated milk because that was all I had) 1 tablespoon sugar free maple syrup (I used Cary's brand) 2 tablespoons fat free sour cream 1/2 cup Southaven Farm Chocolate Baking Mix 3/4 cup granular Splenda 1/2 cup granola (I used some homemade granola, recipe follows)
"Preheat oven to 400 degrees. Spray 4 muffin top sections with butter flavor Pam.
"Whisk together milk, sugar free maple syrup, and sour cream. Stir in Chocolate Baking Mix, Splenda, and granola. Pour into 4 muffin top sections and bake at 400 degrees for 20 minutes."

Note from the Kitchen of Southaven Farm: We made SH's Chocolate Granola Muffin Tops but used store-bought granola. They still turned out perfect and perfectly delicious.

HOMEMADE GRANOLA:
"Ingredients: 1 cup kasha (dry) 1 cup old fashioned oatmeal (dry) 2 tablespoons butter buds, optional 3/4 cup granular Splenda 1/4 cup maple pancake flavored daVinci syrup (This is like a snowcone or coffee syrup, not a regular pancake syrup. I don't know if regular pancake syrup would work or not. You might give it a try if you don't have daVinci.)
"Stir all ingredients till coated. Spread on a large pan. (I used a broiler pan.) Bake at 350 degrees for 21 minutes, stirring every 7 or so minutes."
